Coffee-Flavoured Crumble Cake
Is there a more fitting combo than coffee and cake? I don’t think so.
And it gets even better, because there’s also a crumble on top! I mean …
This coffee and crumble cake recipe is easy to make and will be the highlight of every afternoon tea.
Of course, best enjoyed with a cup of coffee and maybe a scoop of vanilla ice cream.

Ingredients
For the cake
2 eggs
200g sugar
120ml vegetable oil
100ml coffee
150ml milk
300g flour
2 tsp baking powder
70g ground almonds
salt
For the crumble
80g brown sugar
50g flour
40g butter (cold)
40g oats
1 tbsp coffee powder
1 tbsp cinnamon
salt
Method
Preheat the oven to 180°C (fan) and line the base of a 26cm springform tin.
Crumble
In a bowl - combine the flour, oats, sugar, cinnamon, coffee powder and a pinch of salt.
Rub in the diced butter with your fingertips until you get a crumbly texture.
Cake
In a bowl - using an electric mixer, whisk the eggs and sugar until light and airy.
Add in the oil.
In a separate bowl - combine the flour, ground almonds and baking powder.
Fold in half of the dry ingredients, followed by half of the coffee and milk mixture and mix until combined.
Add the other halves and keep whisking until you get a smooth batter.
Spread the batter evenly into the tin.
Sprinkle the crumble on top.
Bake for about 60 minutes or until a skewer inserted into the centre of the cake comes out clean.
Transfer to a wire rack to cool.
