Chestnut Chocolate Cake

Usually, chestnuts are associated with savoury dishes and Christmas.

This cake recipe combines chocolate with rich chestnut flavours, enjoyed all year round.

Also, it’s gluten-free, as there’s no flour in it.

It tastes even better with whipped cream or a scoop of vanilla ice cream.

Ingredients

200g cooked chestnuts

50ml milk

250g ground almonds

40g vanilla custard powder

2 tbsp cacao powder

4 eggs

170g sugar

120ml vegetable oil

Salt


Method

  1. Preheat the oven to 160°C (fan) and grease a cake tin (26cm).

  2. In a food processor - finely chop the chestnuts.

  3. In a bowl - whisk the eggs and sugar until airy.

  4. Add the ground almonds, cocoa powder and a pinch of salt.

  5. Mix in the oil and milk.

  6. Add the chestnuts.

  7. Pour the batter into the tin and bake for about 50 minutes or until a skewer inserted into the cake comes out clean.

  8. Leave to cool on a wire rack.
