Key Lime Pie
Key Lime Pie is a well-known pie from Florida. I had it many times in restaurants, but this was the first time I made one myself.
I love the tangy, refreshing flavours from the limes together with the crunchy biscuit base.
It’s very easy to make with just a couple of ingredients.
If you like, you can top it with some whipped cream.

Ingredients
For the base
200g plain digestives
100g salted butter (melted)
For the filling
4 egg yolks
1 can sweetened condensed milk
4 limes - juice and zest
Method
Base
Grease a 20cm round tin.
In a food processor - pulse the biscuits until crushed finely.
In a bowl - mix the crumbs with the melted butter.
Press it into the tin using a spoon and push up the sides to create a crust.
Preheat the oven to 150°C.
Filling
For the filling - whisk the egg yolks and condensed milk.
Add the lime juice and zest.
Pour it into the prepared base.
Bake for about 30 min until the filling has set.
Leave to cool to room temperature on a wire rack and chill in the fridge for at least 2 hours before serving it.
