Chocolate Courgette Cake

For some, it may sound odd to use vegetables for baking.

I agree that most of the time you won’t particularly taste the vegetable as such, but they keep the cake extra moist, as is the case with this chocolate and courgette cake.

And it’s dead simple and quick to make.

Ingredients

For the cake

200g grated courgette

100ml vegetable oil

2 eggs

100g sugar

200g flour

100g ground almonds

2 tsp cacao powder

1 tsp cinnamon

2 tsp baking powder

50g chocolate drops

vanilla essence

salt


Method

  1. Preheat the oven to 175°C (fan) and grease a cake tin (26cm).

  2. In a bowl, combine the eggs, oil, sugar, vanilla essence and salt.

  3. Mix in the dry ingredients - flour, almonds, cacao powder, cinnamon, chocolate drops and baking powder.

  4. Add the grated courgette and fold in well.

  5. Pour the mixture into the cake tin and bake for about 45 minutes or until a skewer inserted into the cake comes out clean.

  6. Leave to cool on a wire rack.
