Burnt San Sebastián Cheesecake

San Sebastián cheesecake is definitely not one of the prettiest cakes.

But its taste is divine!

A cheesecake without the typical base. Rich and very creamy, with hints of caramel. A true melt-in-your-mouth cake.

Ingredients

230g sugar

25g cornflour

600g full-fat cream cheese

4 eggs

300ml whipping cream

Vanilla essence


Method

Base

  1. Preheat the oven to 180°C (fan) and grease a 24cm round baking tin.

  2. Combine the sugar with the cornflour.

  3. Beat in the cream cheese.

  4. Mix in the eggs, vanilla essence to taste and whipping cream.

  5. Pour the batter into the baking tin.

  6. Bake for 30 minutes.

  7. Raise the oven temperature to 220°C and bake for another 15 minutes until the surface is a deep golden brown. Keep a close eye on it.

  8. Transfer to a wire rack and cool for at least one hour.

  9. Chill in the fridge for 12 hours before serving.
